Mexi salad : I made this and keep dipping in it throughout the day! Makes a great on hand snack. Combine the following
Chop 1/2 red onion put in large bowl
Squeeze 2 limes over onion
Meanwhile chop red,yellow and orange bell pepper & 1/2 bundle of cilantro.
Roast 2 cobs of corn
1 can black beans drained and rinsed
1 cup quinoa
Cumin, salt and pepper
Stir all together and refrigerate
